Abstract: Features and conditions for the functioning of the agro-industrial complex of ex-tractive regions have a significant impact on the direction of development of food and processing industries. The study of modern directions for the development of the agro-industrial complex of such regions confirms that the fundamental factor in the priority development of food and processing industries is the introduction of high technologies for processing, including deep processing of the main types of agricultural raw materials. This direction requires the attraction of significant financial resources, while changing the methodological approach to state support for such industries. In this article, on the example of the producing region (Kemerovo region - Kuzbass), the main directions and stages of the introduction of egg processing, including deep processing, are determined. It has been established that for the effective functioning of the production of egg products, it is necessary to improve the current mechanism for the development of the agro-industrial complex of the region towards the digitalization of the food and processing industry, as well as the development and implementation of high-tech industries. All this will not only increase the food supply of the region and improve its socio-economic development, but and diversify the regional economy, characterized by a dominant extractive focus.
